Pumpkin Spice PB Cookie Dough Bites
So, I'm waiting for this Almond milk Chestnut Praline Latte. 1/2 sweet. Iced. Dosed with extra espresso to settle in. Until then, my mind is relatively blank. But I'm still eager to share this treat of a festive cookie dough bite recipe with you!
Do you ever have those moments where you're feeling extremely snacky and you want just a bite or two? No, a chia pudding is too much. No, you don't feel like an apple. No! You don't want to have toast and avocado.
Simple. In a snap. Easy and just worth a bite or two, I've got you covered. Pop open your fridge, open that lid and that's it!
Since pumpkins have been a major rave during Fall, these Vegan Pumpkin Spiced Peanut Butter Cookie Dough Bites are a true bliss. They are:
- Super easy to make.
- A healthy treat.
- Great to take on the go.
- Perfect pop-in-to-your-mouth bite before or after a workout.
It takes around 20 minutes to prep and create them into balls. I couldn't be happier to make these and share this delicious treat with you. But I'll be honest, I didn't just whip up these munchkins. I got inspired by Lindsay at Cotter Crunch's recipe of white chocolate pumpkin spiced cookie dough bites and decided to make my own :) I love how her recipes inspire me!
Here though, there's actual pumpkin and is completely vegan.
I got my pumpkin spice mix from Flavour God.
I also got the Enjoy Life brand of vegan dark chocolate chips at Whole Foods.
