Zucchini Fritters with Beet Hummus
Hummus fan? Well, you're going to LOVE this!
Before this, I'd been so excited to make beetroot hummus. What a way to add in some beetroot. Some people aren't very fond of beetroots, but seeing as they are pretty beneficial; turning it into an even better tasting meal makes it easier to eat.
What are some of this reddish-maroon root's benefits?

So, I got inspired to make these fritters by Rachel, popularly known on Instagram as Rachels.Fit.Kitchen. I also adapted the fritter recipe just a little from Elise, at Simply Recipes.
