Tofu Soba Noodle Bowl
I absolutely love using tofu in most Asian and Asian inspired meals! I also absolutely love simple but completely appetizing stir-fries. That being said, here's one of my stir-fries that I enjoy a lot.
The beauty of stir-fries is that you use just a little bit of oil to cook using this Asian technique. You are also able to retain and consume nutrients compared to when you boil your vegetables. Plus, using healthier oils, like olive oil, avocado oil and flax seed oil at moderate temperatures keep you and your food good to go!
Additionally, I used soba (buckwheat) noodles for my meal. What is the difference you may ask. Compared to rice noodles, this Japanese noodles has more protein, fibre, carbohydrates, iron and calcium! According to Live Strong though, a drawback is that it can spike your blood sugar level significantly (depending on how much you eat). But you can top noodles with tofu, chicken, beans and vegetables to complete your nutritional value.
Good news for gluten free eaters is that pure soba noodles can be gluten free but you will have to read labels well to be able to gauge that.
Anyway, these nutty noodles went really well with my stir-fry and I balanced the mild spice out by adding some sweet Thai chili sauce to add a pinch of sweetness to my meal.
