Lemon Spaghetti with Spicy Mushrooms
When spicy meets tastefully tangy, some go gaga over it. This lemon spaghetti with spicy mushrooms will make you go gaga over it too!
As you know, I'm a fan of adding some spice and flavour to my food. And while it is quite obvious to many to add some flavour to their meals; lots of people enjoy eating bland. I feel like they are completely missing out- well unless some one is down with a stomach flu or undergoes intestinal or type of stomach surgery.
Anyway, a couple years ago, when I would consume dairy on the daily, I would add in some cooking cream for a richer and creamy texture to this spaghetti. What can I say, it's actually pretty darn good that way. But to be honest, it tastes pretty amazing without the cream as well, and I would like to try adding some non-dairy cream to this recipe and test it out. Till then, this is pretty good in itself.
I find using parsley instead of mint a better option, but I had only mint on hand at the time. I was also trying to experiment adding some other ingredients, so you will notice in the picture above, that I have sun-dried tomatoes. I think they're not very necessary though.
I do recommend you try this recipe out with or without the cream- however it suits you really. It will be enjoyable both ways!
