Chickpea Spinach Green Fritters
So Christmas is here, almost a couple gifts away! Are you excited?! :D
Everybody has lovely decorations and lighting outside their homes a month before. It's amazing how people are so pre-excited and show it with blissful enthusiasm. It's that time of the year when people do really good deeds, buy lots of presents or plan trips and have amazing dinners planned. Christmas tree decorating is an excitement in itself altogether! Ooh, and baking lovely treats... my, my, aren't they absolutely tasty?
Ever tried Green Coconut Fritters with Quinoa?
This is a perfect, filling meal that one can heartily enjoy and joyously chat over at the table with everyone. It is especially ideal as an accompanying meal to enjoy with a few other meals at the table- unless this is all you want to eat. :D

These green coconut fritters are healthy, bountiful and filled with nutty hints of cashew, and leaves mild and tender traces of coconutt-y flavour on your tongue; perfectly combined with chickpeas and some spice to bring some more life to your palate.
So how about some well rounded nutrition for your body and soul? Mmm... it is such a delight to snack on too!
I came across and adapted Kathy Patalsky’s recipe for Green Island Fritters to my liking.
I skipped the guacamole verde as my avocado was not even close to ready, but that’s completely alright. Also, to make it Vegan, you can scroll to the bottom of this page for suggestions, substitutes and improvs.
