Chickpea Orzo Spinach Soup
How does one celebrate rainy, cloudy, depressing days in Raincouver (Vancouver), one might ask.
In response, one of the few things to do as I'd say is making comfort foods. And I'm careful with this one- when I say comfort food, here (and mostly), I mean warm, comforting yet super healthy comfort food.
If you read my Instagram post about this herb infused soup, I mentioned that it isn't a 100% perfect. First, I'll admit to messing up a bit; but second, I didn't horribly, throw-it-away kinda mess it up, you know? And I'm still learning so I'm happy I know what to do next time and I've put them down for you too! See? I'm the test subject so I can make things better for you :):)
I took inspiration for this recipe from Ali at GimmeSomeOven and looove looove loooovved the refreshing, herby aroma and flavours (I don't have too much experience cooking with rosemary, thyme and oregano). I added chickpeas for some protein, calcium and selenium (and we all need some good fiber lovin), spinach at the end, a tiny zing of sriracha to spice up the soup and didn't use carrots as in Ali's recipe. I made some other minor changes and I'm quite happy with how it turned out.

- Well balanced with some mood boosting foods like spinach, beans and herbs
- Easy to prep & make
