Cauliflower Chickpea Curry Wraps
Mmmmhhh okaay so my latest obsession, after having sort of not shared anything with you for a while has been curry wraps.
I hope you’ve been doing well. I don’t have too much to say about myself as I’ve felt that I’ve sort of been pushed almost back to square one with self care and wellness. I’m glad to have started to get back on track now though!
Anyway, so I’m not sure where I whipped this delight from but surely there was some magic in my head haha.
But I love how this curry is the best of both curries- tomato based and coconut based. YEP, there’s coconut in here and the two blend so harmoniously it’s like ooh I can taste hints of tanginess but there’s also lush coconutty notes in there.
The sheer beauty is when you sink your teeth into the cauliflower and soft chickpeas. I don’t think I’m giving enough justice to these but I think you may fall in love with these too. They’re incredibly rich and simple yet so nutritious. My boyfriend and I fall in love with this more and more every time I make some. Every. Damn. Time!
I mean, who knew healthy eating can be this delicious hey? ;)
I gotta say though, with this recipe especially I just eyeballed the amount of most of the spices and adjusted the taste as I went. So some of the spices are going to be up to your tastebuds to adjust. Just know this is creaaaammyyy, lightly tangy but subtly sweet goodness.
Also, I know the list of ingredients may be a long but and seem daunting, but really, the only part where you’ve got to spend much time on is letting it simmer. So there’s quite a bit of idle time, where you can start cleaning up or do something else as well. Minimal chopping. Minimal cutting. Barely any prep. I’ve got you!
